06:46 <@Mirage> When I had the offset smoker and was still buying from the store I'd use charcoal to keep the temp and then toss in soaked chunks of wood every so often for the smoke.  After dad had that 'pig nut' (hickory) get blown over by his house that we cut/split specifically for using in the smoker I just used that straight.

06:52 <@Mirage> Dolemite: I haven't had anything digital yet.  Fully manual offset smoker -> analog controlled pellet smoker.  My new upgrade will be digital.  I'm tired of the temp swings and insanely incorrect temps on this old one.   It's OK-ish if you just switch between 200-225, but if you set it to 250 it'll spike up to ~350.  'Normal' for it, per customer service, is swinging ~25+/- set temp.
